This is a great recipe for breakfast or lunch. You can even prepare everything but the eggs ahead of time and then just warm up a single serving for a quick meal any time you’re hungry. Best of all, you have no more excuses about healthy eating being too expensive!

Ingredients

  • 1 cup dry brown rice

  • 1/2 onion

  • 1 carrot

  • 1 small can of chickpeas, drained

  • 2 cups water

  • 2 tsp turmeric

  • 2 tsp cumin

  • 1 tsp salt

  • 2 tsp pepper

  • 1 clove of garlic, minced

  • 2 tbsp olive oil

  • 2 tbsp all-purpose flour

  • 2 eggs

Directions

  • Cook brown rice according to the package directions and set it aside when it’s done.
  • Saute the onion, carrot and garlic in olive oil for about 3-5 minutes, then add the chickpeas, salt, 1/2 of the spices and fry for 1 minute.
  • Mix water with flour and remaining spices, pour the mixture into a pan and cook until thick
  • Mix rice with vegetables and stir
  • Add two fried eggs to rice and pour curry sauce over everything. Bon appetit!
