Ingredients
½ cup extra virgin olive oil
8 cloves of minced fresh garlic
900 g (2 pounds) of asparagus with the ends trimmed (there is a natural breaking point towards the end of the asparagus’s shoot. You can simply snap these off)
¼ cup shredded Parmesan cheese
1 teaspoon onion powder
Sea salt
Ground pepper
Directions
- Preheat the oven to 200 C° (400 degrees F). Then, line a large pan with cooking parchment paper, and set it aside for later.
- In a small pot, heat up the oil, garlic and onion powder on a medium-low heat on the stove. Cook until the mixture becomes fragrant, approximately 3 minutes. Do not let the mixture become brown.
- Next, lay the asparagus out on the cooking pan. Lightly sprinkle the sea salt and ground pepper over the asparagus, and then coat with the oil and garlic mixture. Sprinkle the oiled asparagus with Parmesan cheese.
- Finish by roasting the asparagus in the preheated oven for 12 minutes. When the asparagus is done cooking, transfer the asparagus to a plate and serve.
