Buffalo chicken wings are a snack favored by many people, and they can also be found in vegetarian and vegan form. For those who have a soy allergy, or are merely looking for a healthier alternative, there are broccoli buffalo bites. It’s the perfect vegetarian dish for your Super Bowl bash, friendly get-together, or late-night munchies snack. You could even make this as a festive side dish for that big dinner party you have planned. It is also a healthy alternative to regular buffalo chicken wings.
Broccoli is one of the healthiest foods you can eat. It is extremely high in fiber and vitamin C. Broccoli is also known to have multiple anti-cancer properties. With this broccoli recipe, you will never have to worry about you or your little ones getting enough vegetables, vitamins, and nutrients in your diet ever again.

Ingredients

  • 1 head of broccoli (large)

  • 1 tablespoon of melted butter (for the vegan option use Earth Balance butter, which you can find at almost any grocery store)

  • 1/4 teaspoon of salt

  • 2/3 cup of hot wing sauce

  • Olive oil

  • 2 teaspoons of garlic powder

  • 1/8 Pepper

  • 1 gallon sized plastic bag

Directions

  • Wash and cut the broccoli’s stems off so you only have the florets. Set aside a baking pan, or even a cooking sheet will work.
  • First you preheat the oven to 225 C° (450 degrees F.)
  • Next, you put the florets into the plastic bag, and then lightly drizzle the olive oil over the florets. Be careful when you are drizzling because you want the broccoli to be barely coated.
  • Now you add the salt, pepper and garlic powder to the mixture.
  • Zip up the bag and toss the florets around in the mixture making sure all the florets are completely coated.
  • Now take the coated florets and put them on the cooking sheet or baking pan, and place them in the middle of the oven rack for precisely 15 minutes. You will flip the florets over midway to ensure an even cooking temperature.
  • While the broccoli is cooking, it is time to melt the butter in a glass bowl. After melting the butter add your choice of hot sauce to the butter.
  • After removing the broccoli from the oven, place them in your hot sauce/butter mixture, and stir with a spoon to make sure the broccoli is completely covered.
  • Return the florets to the oven to cook for 5 more minutes.
  • Voila! You can serve these amazing broccoli buffalo bites with any dipping sauce of your choice. They go perfect with ranch dressing, as well as Bleu cheese.
