Ingredients
3 cups mashed potatoes
1 small onion, finely chopped
2 tbsp all-purpose flour
2 tbsp unsalted butter
1/2 cup milk
1/2 cup white wine
0.5 kg (1 lb) cooked flaked fish of your choice
1 150 gr (12 oz) can drained whole corn kernels
1/2 cup thawed frozen peas
2 tbsp capers
1 tbsp lemon juice
1/2 tsp dried dill
1 tbsp chopped fresh parsley
salt and pepper to taste
2 quartered hard-boiled eggs
1 cup grated cheese of your choice
Directions
- Preheat the oven to 220 C° (350 degrees Fahrenheit).
- Melt the butter in a saucepan. Add the onion and sauté for five minutes. Add the flour and cook over low heat for two minutes.
- Add the milk and wine. Bring to a boil and stir until thickened. Remove from heat.
- Add the fish, corn, peas, capers, lemon juice, dill, parsley, salt, and pepper. Stir until combined. Gently fold in the quartered hard-boiled eggs.
- Pour the mixture into a large casserole dish. Top with mashed potatoes. Sprinkle the grated cheese on top.
- Bake for 30 minutes until the filling is bubbling and the top is golden brown in color. Serve immediately.
