Ingredients
200 g (7 oz) of any whole grain pasta
3 regular chicken breasts, diced
450 g (1 lb) sour cream
55 g (2 oz) butter
100 g (3.5 oz) white onion, diced
3 cloves of garlic, minced
150 g (5.3 oz) chopped bacon
140 g (5 oz) of any grated cheese (I used a mixture of cheddar and mozzarella)
40 g (1.4 oz) grated Parmesan cheese
250 ml (8.9 oz) chicken broth
1 tsp thyme
1 tsp paprika
Salt/pepper to taste
Directions
- Saute the onion and garlic using butter for two minutes.
- Add chicken, spices and salt to the frying pan and cook for about 7-8 minutes until the chicken releases liquid.
- Add bacon to the chicken and cook for about 10 minutes until the meats become slightly browned. Turn the meat over with a spatula from time to time so that it cooks evenly on all sides.
- Meanwhile, cook the pasta in salted water for three minutes. It should be slightly under cooked, even more than “al dente” under cooked. Drain the liquid.
- Add sour cream and chicken broth to the pan and bring the mixture to a boil.
- Add the semi-cooked pasta to the frying pan with the rest of the ingredients and cook for about 10 minutes until the excess liquid has evaporated and the mixture is thick.
- Now add half the Parmesan cheese and all the other grated cheese to the pan. Cook the mixture, stirring constantly for about a minute until the cheese dissolves.
- Garnish the completed dish with the remaining Parmesan and add fresh thyme leaves if desired.
