Ingredients

  • 4 Cod Fillets, With No Skin

  • Cracker Meal

  • 3 Tablespoons of Vegetable or Olive Oil

  • 1 Lemon

  • 1 Cup Milk

  • 1/2 tsp. Salt to Taste

  • 1/2 tsp. Pepper to Taste

Directions

  • Begin by heating a non-stick skillet with 3 tablespoons of vegetable oil or olive oil of your choice over medium-high heat. Cut cod into filet-sized pieces of around 170 g (6 oz. each) if not already done. You may also cut into smaller sized portions if desired. Rinse cod under cold water and pat dry with a paper towel. Season the fish with salt and pepper on each side to taste.
  • Pour 1 cup of milk into a shallow bowl and cracker meal into an additional shallow bowl.
  • Dip each piece of cod into the milk and gently shake off extra liquid.
  • Dip cod into cracker meal mixture, ensuring that all sides are covered with this crust.
  • Place cod onto clean plate while each additional piece is breaded. Season each side with salt and pepper again if desired.
  • Place cod into pre-heated skillet filled with oil and pan-fry on each side for about 4 to 5 minutes or until cooked all the way through. Remove fish from skillet and place on paper towel-covered plate to absorb excess oil.
  • Once cooled, top the fish with squeezed lemon juice or serve with lemon on the side.
