Ingredients

  • 450 g (1 pound) of ground turkey

  • 1 chopped onion

  • 2 cups of water

  • 1 cup of chicken broth

  • 2 tablespoons of chili powder

  • 1/2 teaspoon of paprika

  • 1/2 teaspoon of dried oregano

  • 1/2 teaspoon of salt and pepper

  • 1/2 teaspoon of ground cayenne pepper

  • 1/2 teaspoon of ground cumin

  • 1 can of kidney beans

  • 1 tablespoon of minced garlic

  • 1 teaspoon of vegetable oil

  • 1 can of crushed tomatoes

  • 1 red bell pepper

  • 1 bay leaf

Directions

  • In a large pot, add the vegetable oil and heat until warm. Add the pepper, onion and garlic to the oil and stir until the onion becomes translucent. Stir occasionally. The onion and peppers will take approximately five to seven minutes to cook.
  • Next, add the ground turkey to the pot. Mix the ground turkey with a large wooden spoon. The turkey will be cooked when it’s not pink and is 70 C° (165 degrees Fahrenheit). It doesn’t take that long to cook the turkey. Make sure to keep stirring and let the turkey crumble. It’ll take around five minutes.
  • Once the turkey is cooked, the rest of the ingredients can be added to the mixture. The chili powder, salt and pepper, oregano, cumin and cayenne pepper can be stirred into the ground turkey and vegetable mix and will need to be cooked for one minute to infuse the turkey with the spices.
  • Add the tomatoes and chicken broth then let the chili simmer for a few minutes. You’ll be able to smell the wonderful spices mixing with the turkey, vegetables and tomatoes.
  • The beans are added last with the bay leaf. The chili should simmer while you stir it occasionally.
  • After a few minutes on a simmer, turn the heat down to low and let it cook for 30 minutes.
