Ingredients
1 cup dry brown rice
1/2 onion
1 carrot
1 small can of chickpeas, drained
2 cups water
2 tsp turmeric
2 tsp cumin
1 tsp salt
2 tsp pepper
1 clove of garlic, minced
2 tbsp olive oil
2 tbsp all-purpose flour
2 eggs
Directions
- Cook brown rice according to the package directions and set it aside when it’s done.
- Saute the onion, carrot and garlic in olive oil for about 3-5 minutes, then add the chickpeas, salt, 1/2 of the spices and fry for 1 minute.
- Mix water with flour and remaining spices, pour the mixture into a pan and cook until thick
- Mix rice with vegetables and stir
- Add two fried eggs to rice and pour curry sauce over everything. Bon appetit!
