Ingredients

  • 6 eggs

  • ¼ white onion

  • ½ red bell pepper

  • 3 to 6 white button mushrooms

  • 4 slices cooked bacon

  • Salt and pepper

Directions

  • Preheat the oven to 175 C° (350 degrees Fahrenheit). Spray a deep, 12-slot muffin tin with non-stick cooking spray. You can also simply brush vegetable oil onto the pan if you do not have the spray. A muffin tin with deep cups is best for this breakfast recipe.
  • Dice the white onion, red bell pepper, mushrooms and cooked bacon. Make sure that the ingredients are cut as evenly as possible. Being a versatile recipe, it can be adjusted to include or to remove whatever ingredients you like.
  • Fry the onion and mushrooms until golden for 5 minutes, then add the bell pepper and fry for another 3 minutes
  • Fry the bacon in a separate pan and set aside

  • Top with egg mixture
