Ingredients

  • 200 g (7.1 oz) canned tuna

  • 300 g (10.7 oz) orzo pasta

  • 1 cucumber

  • bunch of dill

  • bunch of basil

  • 1/2 cup chopped green onion

  • Half red onion chopped

  • 3-4 tbsp mayonnaise

  • 1/2 cup olives with anchovies

  • 1 tbsp capers

  • 1 cup arugula

Directions

  • Boil orzo pasta in salted water until al dente. Drain excess liquid and rinse the pasta under running cold water until it cools completely.
  • Cut olives and capers into small pieces. I use olives with anchovies as they give a special flavor to this salad, but you can use plain green olives or black olives, whichever you prefer.
  • Chop the greens, but not too finely. You can also use parsley or mint leaves. In general, any greens that you like will do.
  • Dice the cucumber. It is better to use young cucumbers that are not too mature. Big cucumbers often are bitter.
  • Finally, mix all the ingredients well in a large bowl. This dish is perfect for dinner as it is quite light and rich in dietary fiber found in vegetables and herbs. In my opinion, the most delicious version of this salad is with mayonnaise, but if you do not use mayonnaise, add olive oil and lemon juice instead
