Ingredients

  • 400 g (14 oz) penne pasta

  • 400 g (14 oz) skinless chopped tomatoes

  • 1 large carrot, chopped

  • 1 medium onion, chopped

  • 1 celery stalk, chopped

  • 2 tbsp olive oil

  • 5 garlic cloves, minced

  • 200 g (7 oz) grated cheddar cheese

  • 2 tbsp balsamic vinegar

  • Bunch of fresh oregano or 1 tsp dry

  • Bunch of fresh basil

Directions

  • Sauté the onion, celery and carrots in olive oil until golden brown.
  • Add garlic and cook for another minute.
  • Add tomatoes and balsamic vinegar. Cook for about 3 minutes.
  • At the very end, add oregano and basil.
  • Using a blender, puree vegetables until smooth. Vegetable sauce is ready.
  • Boil pasta in salted water until al dente. Drain the water.
  • Mix pasta with vegetable sauce. Distribute the pasta in a baking dish.
  • Sprinkle everything on top with cheese and bake in the oven at 220 degrees C° (430 F) for 15 minutes.
