Ingredients
400 g (14 oz) penne pasta
400 g (14 oz) skinless chopped tomatoes
1 large carrot, chopped
1 medium onion, chopped
1 celery stalk, chopped
2 tbsp olive oil
5 garlic cloves, minced
200 g (7 oz) grated cheddar cheese
2 tbsp balsamic vinegar
Bunch of fresh oregano or 1 tsp dry
Bunch of fresh basil
Directions
- Sauté the onion, celery and carrots in olive oil until golden brown.
- Add garlic and cook for another minute.
- Add tomatoes and balsamic vinegar. Cook for about 3 minutes.
- At the very end, add oregano and basil.
- Using a blender, puree vegetables until smooth. Vegetable sauce is ready.
- Boil pasta in salted water until al dente. Drain the water.
- Mix pasta with vegetable sauce. Distribute the pasta in a baking dish.
- Sprinkle everything on top with cheese and bake in the oven at 220 degrees C° (430 F) for 15 minutes.
- Garnish the finished dish with fresh basil. Serve with cherry tomatoes!
