Ingredients

  • 2 packs of instant ramen noodles

  • 2 eggs

  • 1 chicken breast

  • 1 liter chicken broth

  • 2 tbsp chopped green onion

  • 4 shiitake mushrooms

  • 1 chopped carrot

  • Handful of baby spinach

  • 4 tbsp sesame or sunflower oil

Directions

  • Cut the shiitake mushrooms into thin strips and set aside.
  • Saute the carrots until golden, about 5 minutes, and set aside.
  • Bring 1 liter of water to a boil. Gently place the eggs in the boiling water and cook for about 6-7 minutes. It is important to cook eggs in this way, so you can peel of the shells flawlessly. Remove the eggs from the heat and let them cool in cold water.
  • Saute chicken breast in sesame oil. This will take about 15 minutes. Cut the chicken and set aside
  • Saute the mushrooms in sesame oil for about 5-6 minutes and set aside.
  • Bring the chicken broth to a boil, then add the instant noodles and cook for about 2-3 minutes.
  • Peel boiled eggs and cut into 2 parts
  • Distribute the ramen among bowls and top with the shiitake mushrooms, carrots, spinach, chicken and egg halves. Sprinkle everything with green onions and enjoy this delicious Asian-inspired dish!
