Ingredients
900 g (2 pounds) of carrots, chopped and peeled
1/2 cup of butter, softened
3 eggs
3/4 cup of brown sugar
1/4 cup of all-purpose flour
1 1/2 teaspoons of baking powder
3/4 teaspoon of baking soda
Directions
- Preheat your oven to 180 C° (350 degrees F). In a large stockpot, bring enough water to a boil to cook the carrots. Cook them until they are tender, about 10 to 15 minutes. Remove the carrots from the heat and drain them.
- Place cooked carrots into a food processor or blender along with the butter and puree.
- Add the brown sugar, eggs, baking soda, baking powder and flour. Blend until smooth.
- Pour this mixture into a baking dish then put this baking dish in a larger one with about 1 inch of water. This will help to prevent burning.
