When most people think of comfort foods, meatloaf makes the top of the list. It sometimes seems like everyone in the world has his or her own version of what makes this ground beef dish perfect. What you put into your meatloaf isn’t necessarily what your neighbor puts in hers. If you’re like most home cooks, you might even use your mother’s meatloaf recipe and put your own twist on it.

The Great Depression left people across the country out of work and struggling to feed their families. Ground meat was relatively inexpensive, and adding crackers, cereal or other binders helped cooks feed larger groups of people for less money. Rationing of meats and other foods during the war years led to women using simple ground beef recipes to feed their families while sticking to a budget.

  • 750gr (1 ½ pounds) of ground beef

  • 1 sleeve of crushed salted crackers

  • ½ cup diced onions

  • ½ cup diced green peppers

  • 1 tablespoon chopped garlic

  • ¼ cup ketchup

  • 2 tablespoons of yellow mustard

Directions

  • Set the oven to 180C° (375 degrees Fahrenheit)
  • Place the egg in a small bowl. Beat until the yolk and white are combined.
  • Add the ground beef, crackers, onion, garlic, green peppers, ketchup, and mustard to the bowl. Mix until the ingredients are well combined. You can also add a small number of other vegetables as filler, including chopped and diced carrots or sweet peppers.
  • Place the ground beef mixture into an ungreased loaf pan covered with baking paper for easy extraction. Set the pan to one side as you mix the topping.
  • Combine the brown sugar, ketchup, and mustard in a small bowl. If you want something a little spicier, replace the ketchup with your favorite barbecue sauce.
  • Pour the mixture over the top of the meatloaf, using your hands to ensure you coat all areas of the top.
  • Bake the meatloaf for one hour in the oven or until the meatloaf is cooked through.
  • Serve the finished meatloaf with your favorite side dishes, including mashed potatoes, sweet potato casserole, green beans, mixed vegetables, or a simple salad. If you have any leftover meatloaf, try eating it cold or slightly warmed between hearty slices of bread for a quick sandwich.
