Ingredients

  • 450 g (16 oz) packaged or homemade gnocchi

  • 220 g (8 ounces) turkey breast

  • 1 cup chopped white onion

  • 3/4 cup chopped red pepper

  • 1 tablespoon garlic, minced

  • 1 teaspoon basil, dried or fresh

  • 1/4 teaspoon fennel seeds

  • 1/2 cup white wine, dry

  • 3 tablespoons tomato paste

  • 1 can diced tomatoes with garlic, basil and oregano

  • 1 tablespoon Romano cheese, finely grated

  • 1/2 teaspoon black pepper, freshly ground

  • Basil sprigs as an optional garnish

Directions

  • Cook your gnocchi according to the directions on the package, but do not add salt or fat, like butter or oil. Drain and set aside.
  • Sauté the turkey on a small amount of olive oil until it turns golden brown. Put it aside.
  • In the same saucepan, sauté onions and garlic until golden
  • Add red bell pepper and sauté for another 3 minutes
  • Add white wine, tomatoes and tomato paste, salt, spices to the mixture. Simmer for another 3 minutes
  • Add turkey, sauté for 5 minutes
  • Remove the casserole from the heat, add cheese on top.
