Ingredients

  • 1 box whole wheat rotini

  • Salt

  • 1/4 cup apple cider vinegar

  • 1/4 cup olive oil

  • Black pepper

  • 2 stalks of green onions

  • 3 large tomatoes

  • 3 cloves of garlic

  • 1 package of pre-cooked crab meat (imitation is fine)

Directions

  • Fill a large pot with water and a few pinches of salt. Bring the water up to a rolling boil, and add the whole wheat pasta. Allow the pasta to cook thoroughly. This usually takes around 7-8 minutes.
  • Drain the pasta into a colander and run it under cold water. Set aside
  • Mince two stalks of green onions and three garlic cloves, and add to a large mixing bowl.
  • Dice three large tomatoes, and add to the mixing bowl. Almost any vegetables can be used in this pasta salad. Celery and bell peppers are also excellent additions. Also consider adding chopped tart apples.
  • Open the package of crab meat, chop roughly, and add to the bowl. Toss in the cooked pasta.
  • Top with olive oil and balsamic vinegar. You may also add ¼ cup of low-fat mayonnaise if you want a creamier flavor.
  • Add pepper to taste. You can also add the spices that most appeal to you. Rosemary and tarragon are lovely, and if you have an Italian herb mix, a few pinches can liven up the pasta salad quite nicely.
  • Toss the whole wheat pasta salad until the ingredients are completely mixed. This dish can be served immediately, or it can be set in the refrigerator to chill for a few hours to bring out the flavors
