Mexican food is popular with many crowds, and enchiladas are a staple of a Mexican meal. Enchiladas are often served at restaurants with either beef, chicken or cheese inside. You don’t need to visit a restaurant to get delicious Mexican food. Appealing enchiladas can be made right at home.

Enchiladas are typically made by stuffing cheese and meat, if desired, into soft tortillas. The rolled tortillas are then placed in a baking dish and covered with cheese and sauce. While many dishes are seasonal, Mexican food can be enjoyed all year long. If enchiladas are being served at a dinner party, then chips and salsa can be served as a quick and easy appetizer. Margaritas can also be offered as a part of the Mexican food theme.
Your family, friends and guests will certainly enjoy the delicious taste of beef enchiladas covered in melted cheese. This enchilada recipe provides just the right amount of flavor and can be made quickly. 

Ingredients

  • 450 g (1 lb) ground beef

  • 1 small onion, diced

  • 1 package taco seasoning

  • 1 can red beans

  • 400g (14 oz) enchilada sauce, green or red

  • 1 package shredded cheddar cheese

  • 1 package flour tortillas

  • 1/2 cup water

  • Soft butter

  • Sour cream

  • Salsa

  • Lettuce

Directions

  • Brown the ground beef and onion together in a sauce pan and then drain off the grease.
  • Add the package of taco seasoning, along with 1/2 cup of water and the red beans. Cook on medium heat until the liquid drains off. Set the mixture aside so that you can prepare the tortillas.
  • Apply a small amount of butter to both sides of the tortillas. Place a skillet on a low heat setting and add the buttered tortillas one at a time. Turn the tortillas over after 15 or 20 seconds on each side. You just want to soften the tortillas so that you are able to roll them easily. The butter will also give the tortillas extra flavor. After the tortillas have been softened, place them on a plate until you are ready to roll them.
  • Once you have heated all the tortillas you want, coat a 9 x 13 baking dish with butter and place a tortilla in it. Add the meat mixture and shredded cheese before rolling.
  • Continue rolling the meat mixture and cheese in the tortillas until the meat mixture is gone or until you have the desired amount of enchiladas.
  • Any meat mixture that is remaining can be sprinkled on top of the dish. Add extra cheese over the top of the enchiladas
  • Pour the can of enchilada sauce over everything.
  • Bake the enchiladas at 170 C (350 degrees F) for 20 minutes or until the cheese on top has melted. Serve hot and use sour cream, salsa and lettuce as toppings if desired for flavor. If you want to serve a larger group, then you can modify the recipe by using more ground beef and tortillas.
