The first written record of mashed potatoes is dated 1747 which surprisingly doesn’t seem that old, considering the simplicity of the dish.

Ingredients
4-5 Potatoes
Milk 1/2 cup
Green onions
Parsley
Dill
Butter 28 g (1 oz)
Salt to taste
Directions
- Cut the potatoes into wedges, add water to completely cover the potatoes and let it boil for about 35 minutes (I boil the potatoes without peeling them, to preserve nutrients). Add salt.
- When the potatoes are cooked, drain all the water, remove the peel, add milk and butter
- Mash the potatoes with a perforated spatula or you can do it with a fork, don’t mash it for too long or the potato starch will start interacting with the water and you’ll end up with a sticky, slippery mass.
- Add herbs and stir
- Your smashed potatoes are ready. This is a great garnish for any meat, fish or vegetables.
