kcalI was at home the other day feeling lazy without much ingredients at hand. I didn’t want to go for groceries just yet, but I needed to make something to eat for me and my husband. So this is the story of this recipe. All the ingredients are very healthy and natural, so these meatballs are the ultimate thing if you need something tasty and good for your body.
If you want to make them even more dietetic, you can skip frying the meatballs in olive oil, this way you can save a bit of time and calories in the final version of the dish (but they will lose in taste a little bit).
Among other great healthy ingredients, my recipes contains celery and parsley, both extremely good for us as they contain fiber and have anti-inflammatory properties. Parsley is the ultimate hero at providing vitamin C, while celery may help lower blood pressure levels due to its high content of phthalides, which are compounds that can help relax the muscles in the walls of blood vessels.

2 medium carrots
2 stalks of celery
4 garlic cloves
bunch of parsley
1 large white onion
25 g olive oil
1 egg
spices (paprika, dry garlic, black pepper)
10 g salt
Directions
- Grind the onion and celery with a blender, you will get a liquid substance
- Drain excess water from the onion and celery, the mass should become more consistent. Chop the garlic separately.
- Grind carrots in a blender, set aside
- Add the egg and parsley to the blender, grind everything for 3 minutes.
- Combine all ingredients in a large bowl.
- Form small balls from all minced meat
- Fry the balls in a skillet for 2 minutes until golden brown. (You can skip this step if you don’t have time or don’t use oil in your diet)
- Lay foil on the bottom of the baking dish, put the meatballs, cover them with foil on top and put in the oven for 30 minutes. Bake at 220 degrees C° (430 F).
- These meatballs go great with broccoli or rice. Bon appetit.
