Ingredients

  • 3 fillets of salmon

  • 1 bunch of finely chopped dill

  • 40 g (1.37 oz) bread crumbs

  • 40 g (1.37 oz) grated Parmesan cheese

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 tbsp lemon zest

  • 3 tbsp lemon juice

  • 2 tbsp Dijon mustard

  • Salt, pepper to taste

Directions

  • Salt and pepper the fish on all sides
  • In a large skillet, saute the salmon in a mixture of butter and olive oil until golden brown, for about 7 minutes. Add lemon juice and cook for another 5 minutes.
  • Place the cooked fish on a plate and pat dry with paper towels to remove excess fat.
  • Combine Parmesan, dill, bread crumbs and lemon zest in a deep bowl. The breading mixture is ready.
  • Cover all sides of salmon with mustard
  • Then coat it in breading mixture.
  • Take a baking dish and line the bottom with baking paper. Place the fillets.
  • Place in the oven for 15 minutes at 220 degrees C° (428 F).
