Ingredients

1 cup brown rice
4-5 cups of chicken broth
fresh cilantro
10 snow peas
2 large carrots
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
2 ribs of celery
1 clove of garlic
1/2 Vidalia onion
1 tbsp of chopped ginger
60 g (2 oz) coconut oil
salt to taste
2 boneless, skinless chicken breasts
Directions
- Mix brown rice with chicken broth and place over medium heat. Simmer until rice is soft, for about 30 minutes.
- Grill the chicken breasts using 1/3 of the coconut oil. The breasts should be golden brown on each side as a result
- Cut the breasts into strips and set aside.
- Saute the ginger and garlic in the remaining coconut oil for about 30 seconds.
- Add celery, carrots, and onions to the skillet; cook until onions are soft, for about 3 minutes.
- Add snow peas and saute for 2 more minutes
- Add bell pepper and saute for 2 more minutes
- Add chicken to the pan and saute over low heat for about 5 minutes
- At the end, sprinkle the dish with cilantro leaves
- Put the cooked rice on a plate, put vegetables with chicken next to it and enjoy!
