The chicken stir-fry for this recipe is one whose other main ingredient is broccoli, though there are many ingredients that work in combination to make this a dish to remember.

The three key components of a stir-fry are the sauce, the chicken and the vegetables. If you get these three components right, then the dish will usually come out tasting quite delicious. For this recipe, the chicken should be about 1 pound of boneless and skinless chicken breasts, while the sauce is comprised of chicken broth and cornstarch for thickness, with a few tablespoons of soy sauce to properly bring out the flavor of the chicken and the rest of the ingredients. Some of the other ingredients that are used within this dish include broccoli, mushrooms and red bell pepper. Once preparation and cooking is complete, it is then served atop hot white rice, making for an extremely tasty meal that everyone will love.


  • 1 pound skinless and boneless chicken breast, then to be cut to 1-inch portions

  • 2 chopped garlic cloves

  • 1/2 onion, cut into wedges

  • 1 cup small carrots, cut in half

  • 2 cups small broccoli

  • 1/2 cup sliced mushrooms

  • Make sure your non-stick pan is 12 inches in diameter. Spray the skillet with cooking spray to keep the ingredients from sticking. Place over a heat set anywhere from 5-8. Add chicken and garlic and stir quickly to saute the ingredients for 2-3 minutes until the chicken is browned. Set the chicken aside in a separate bowl.
  • Put carrots, onions in a pan, fry for 2 minutes after adding 1/2 cup of broth. Cover the skillet and cook over medium heat for about 3 minutes, stirring 2-3 times. After that, it’s time to add mushrooms, bell peppers and broccoli. Cook for about 5 minutes, stirring occasionally
  • Mix cornstarch with soy sauce, sugar and the rest of the broth.
  • Toss this mixture with the chicken in the pan and cook until the sauce thickens. Stir often, to achieve this. Then add vegetables to the mixture. Once it’s finished, serve with rice.
