kcalFor all connoisseurs of citrus desserts, I strongly recommend trying to bake this simple lemon cake. Dough preparation takes only about 10-15 minutes, everything is as quick and simple as possible. The cake turns out to be small in size, so if necessary, the number of ingredients can be safely doubled.
For this recipe, I use 1 lemon, but I try to buy a large one so the cake gets this amazing rich lemon flavor.
The cake is absolutely wonderful: crumbly dough, rich lemon flavor, moderately sweet, with the sourness characteristic of this fruit, it doesn’t require too much effort or time, but turns out great. Ideal for the arrival of guests, and for a simple, cozy tea party. No special preparation is required for this one, except buying all necessary ingredients.

Ingredients
1 cup sugar (200 g – 7 oz)
2 teaspoon lemon zest (8 g – 0.3 oz)
1/2 cup softened butter (115 g – 4.1 oz)
2 tablespoons of vegetable oil
2 large eggs (room temperature)
2 tablespoons of lemon juice (30ml – 1 fl oz)
1 and 1/2 cup all purpose flour (207 g – 7.4 oz)
1 teaspoon baking powder (7g – 0.25 oz)
1/2 teaspoon salt
1/2 cup milk (120 ml – 4.1 fl oz)
- Lemon Glaze
1 cup icing sugar (120 ml – 4.3 oz)
2 tbsp lemon juice (50 ml – 1.7 fl oz)
1 tbs lemon zest
Directions
- Combine butter and sugar. Butter should be soft but not melted
- Add 2 eggs and stir until the mixture becomes fully mixed
- Add lemon juice, milk, oil, mix everything well.
- Add a pinch of salt, flour, baking powder and lemon zest to the mixture. Leave some zest for the frosting.
- Put baking paper on the bottom of the mold, put the dough on top and bake for about 40 minutes at a temperature of 220 degrees C° (430 F). You can check the readiness of the cake with a toothpick – pierce the dough with it, and if the toothpick is dry, then the cake is ready.
- For the glaze, mix the icing sugar with the lemon juice and add the remaining zest.
- Remove the cake from the mold and pour frosting over it.
- Cut into serving pieces and enjoy!
