Ingredients

1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 yellow bell pepper, cut into strips
100 g (3.5 oz) shallots, coarsely chopped
4 large Italian sausages
2 tbsp chopped parsley
3 cloves garlic, minced
1 tsp oregano
1 tsp basil
1 tsp smoked paprika
Salt/pepper to taste
2-3 tbsp olive oil
Directions
- Simmer the sausages in water for approximately 10 minutes.
- Cool the sausages to room temperature. Then put them in the freezer for 15 minutes to improve the taste. Peel the cooled sausages and cut into slices.
- Fry the sliced sausages in olive oil with spices, salt and pepper for 5 minutes. Don’t forget to stir so that they are evenly fried on all sides.
- Add shallots and cook for another 3 minutes. Stirring constantly with a spatula.
- Now add all 3 types of bell peppers to the pan. Saute for about 3 minutes
- Add garlic and cook for another three minutes.
- At the very end, add chopped parsley and cook for another 1 minute.
