Ingredients

  • For the Cake
  • 165 g (5.9 oz) flour

  • 50 ml (1.7 fl oz) whole milk

  • 200 g (7.1 oz) sugar

  • 100 ml (3.4 fl oz) of cream (30% of fat or above)

  • 3 eggs (egg whites only)

  • 100 g (3.5 oz) butter (room temperature)

  • 1 tsp almond extract

  • 1 vanilla extract

  • 1 tsp baking powder

  • Frosting & Coating
  • 100 ml (3.4 fl oz) cream

  • 250 g (8.9 oz) Mascarpone cheese

  • 270 g (9.6 oz) Philadelphia cheese

  • 100 g (3.5 oz)powdered sugar

  • 1 tsp vanilla extract

  • Filling
  • Any jam (I use strawberry)

Directions

  • Making the cake
  • In a large bowl, mix cream, butter and sugar using an electric mixer.
  • Add egg whites and mix for 5 minutes.
  • Add milk, vanilla and almond extract, mix for about 1 more minute.
  • In a separate bowl, whip the cream to soft peaks.
  • Add the cream to the first bowl.
  • In a separate bowl, mix flour and baking powder. Sift the flour and baking powder through a sieve several times.
  • Add sifted flour to liquid ingredients. Mix everything well with a whisk by hand.
  • Take a baking ring and line the bottom with baking paper.
  • Pour the batter into your baking ring.
  • Place the baking form with the batter in an oven preheated to 180 degrees C° (356 F) to bake for 50 minutes. To check the readiness, pierce the cake in the center with a toothpick; if it is dry, the it is ready.
  • Carefully run a knife around the edge of the pan and remove the cake from the baking form. Wrap it in cling film and leave it in the refrigerator to cool completely.
  • Frosting & Coating
  • Combine cream and powdered sugar in a large bowl with a mixer. Add Mascarpone and Philadelphia cheese.
  • Using a mixer at medium speed, combine until the cream becomes thick.
  • Assembling the cake
  • Cut the cake in the middle to make 2 layers.
  • Spread jam on the bottom of the top layer
  • Cover it completely with cream on top.
  • Now put one layer on top of the another
  • Cover completely the top and sides of your cake with the cream. Use spatula to spread it evenly.
  • If desired, use a pastry bag to form flowers on the top of the cake. Also, you can add sprinkles or other pastry decoration elements.
  • The cake is ready! It can be immediately cut and served. Bon appetit!
