Ingredients

  • 1 tsp baking powder

  • 300 g (11 oz) white flour

  • 300 g (11 oz) sugar

  • 315 g (12 oz) buttermilk

  • 111 g (4 oz) butter

  • 2 medium eggs

  • 10 g (0.35 oz) vanilla extract

Directions

  • Preheat oven to 350 degrees. Grease and flour a tube or Bundt cake pan
  • Set aside ¼ cup sugar. Cream the remaining sugar with butter until you have a fluffy batter. Separate egg whites from yolks. Beat egg yolks, and then add them to the batter. Mix well. In a separate bowl, whip egg whites while slowly adding the ¼ cup sugar that was set aside. Continue whipping until egg whites form stiff peaks. Gently fold the egg white mixture into the batter.
  • Pour the batter into the cake pan and place it on the center rack in the oven. Bake for 40 minutes or until cake rises to the edges of the pan. Reduce the heat of the oven to 300 degrees, and continue cooking until done. The total baking time is approximately 1 hour.
  • Let the cake cool in the pan for 15 minutes, then turn cake out of pan onto a cake plate or cooling rack to finish cooling. If the cake is sticking to the pan, run a spatula along the sides of the pan to loosen it.
  • This classic buttermilk cake will be a favorite at any gathering. If you don’t have buttermilk, you can make a substitute with milk. Add 1 tablespoon of lemon juice or vinegar to an empty glass or measuring cup. Add 1 cup of milk, and let the mixture sit for at least 2 minutes. The milk will become acidic and curdle, creating an easy substitute for buttermilk.
