Ingredients
1 1/2 cups long grain white rice
2 cups low sodium chicken broth
2 tbsp canola oil
1 tbsp minced garlic
2 tbsp minced onion
1/4 cup each of diced red, yellow and green bell peppers
1/4 cup jalapeno pepper (optional)
1 tbsp chopped fresh cilantro
salt and pepper to taste
230 g (8 oz) can tomato sauce
Directions
- Rinse the rice in cold water. Set aside. Finely dice the peppers and chop the cilantro.
- In a medium size frying pan, heat the oil over medium heat. Add the uncooked rice. Saute the rice for about 2 minutes, stirring constantly. The rice should turn a light golden color.
- Add the chicken broth to the cooking pot.
- Heat to a boil. Add all the other ingredients. Turn heat to low. Tightly cover the lid. Simmer the rice for 15 minutes.
- Remove the pot from the heat, and stir the rice and add cilantro before serving.
- If you have any leftovers of this rice after your meal, refrigerate them immediately. You can use the leftovers as a filling for a soft taco or wrap along with some cheddar or pepper jack cheese and shredded lettuce.
