Ingredients

  • 1 1/2 cups long grain white rice

  • 2 cups low sodium chicken broth

Directions

  • In a medium size frying pan, heat the oil over medium heat. Add the uncooked rice. Saute the rice for about 2 minutes, stirring constantly. The rice should turn a light golden color.
  • Add the chicken broth to the cooking pot.
  • Heat to a boil. Add all the other ingredients. Turn heat to low. Tightly cover the lid. Simmer the rice for 15 minutes.
  • Remove the pot from the heat, and stir the rice and add cilantro before serving.
