Ingredients

  • 4 chicken breasts

  • 1 medium bell pepper

  • 1 large carrot

  • 1 regular sized onion

  • 250 g (9 oz) rice (round grain)

  • 280 ml (9.5 fl oz) water

  • 3 tbsp vegetable oil

  • 1 tbsp minced ginger

  • 1 tbsp minced garlic

  • 50 ml (1.7 fl oz) liquid sushi seasoning (or 25 ml (0.86 fl oz) rice vinegar)

  • 1 tbsp sugar

  • 3 tbsp soy sauce

  • Chopped green onion

Directions

  • Rinse the rice under running water, about 3-4 times. Put the rice in a saucepan and add water. Place the pot over high heat and once the water boils, reduce the heat to low and cover with a lid. Boil for another 15 minutes. Do not open the lid when cooking rice. After the rice has absorbed all the water, turn off the heat and leave the rice covered with lid for another 10 minutes.
  • Combine liquid sushi seasoning and sugar in a glass. Add the mixture to the pot with the rice and stir well. Let the rice soak for 15 minutes.
  • Meanwhile, chop the onion and carrot and set aside.
  • Chop the bell pepper and set aside.
  • Wash the chicken breasts and dry them with paper towels.
  • Cut chicken breasts into chunks
  • Saute the chicken in vegetable oil until golden brown. Set aside.
  • In another skillet, sauté the onion and carrots until golden, for about 5-6 minutes.
  • Add ginger and garlic to the skill skillet. Cook for 2 more minutes.
