With more and more people finding out that they can’t have gluten, it’s harder to find easy dessert recipes that don’t require extra trips to the grocery store for special ingredients. The holiday season, parties and gatherings with family and friends can be a minefield if you’re trying to find foods that everyone can eat.

Gluten is found in many dessert recipes because of the grain from the flour. Wheat, barley and rye are the main culprits hiding gluten since it’s found in most grains. This can be a problem when it comes to cake and cookie recipes, but won’t be a problem with this easy cookie recipe. Guests will thank you for considering their allergy issues during your preparations.

This easy dessert recipe for gluten-free peanut butter cookies is sure to be a hit for anyone who has a problem with gluten in their food. It can be made with simple ingredients already available in the home, so you don’t have to go out shopping for special flour.

The prep time for these cookies is approximately ten minutes, and cooking time is around ten minutes as well. The speed of preparation depends on how fast you can find the items in your kitchen and mix these simple ingredients together.

Ingredients

  • 1 cup of sugar

  • 1 egg

  • 1 cup of peanut butter

  • 1 teaspoon of baking soda

  • A pinch of salt

  • One teaspoon of vanilla extract

Directions

  • The oven should be preheated at 170 C (350 degrees F). In a medium mixing bowl, add peanut butter and sugar. Mix these ingredients together until the peanut butter is smooth.
  • Add egg and mix gently.
  • After the mixture is smooth, add the rest of the ingredients.
  • Grease the cookie sheet before adding the cookie dough. Once all the ingredients are mixed, scoop a small, one-inch portion out of the batter and roll it into a ball. Each ball should be approximately two inches apart so they don’t crowd each other while cooking. After all the cookie balls are on the sheet, dip a fork into a bit of sugar and press it into the balls in a criss-cross pattern. This will give the peanut butter cookie its distinct appearance. The sugar will give it an extra bit of sweetness, but it also helps to keep the dough from sticking to the fork.
  • Slip the cookie sheet into the oven and cook for approximately ten minutes. When the cookies have been baking for seven or eight minutes, check to make sure they are not overcooking. The peanut butter cookie will not brown like other cookies, so be careful about browning or overcooking them. Take the cookies out of the oven and let them cool for a few minutes before removing them from the cookie sheet.
