Caramel Apple Pie Recipe

Nothing is more cozy than sitting in your home when it’s cold outside and enjoy a nice cup of tea with this caramel pie with cinnamon notes. I made this recipe using my homemade caramel I’ve made into a separate recipe. The most important comment I have about this recipe – be careful dealing with the crust dough – it is very fragile, especially when the pie is ready and it is time to get it out of the baking form. Anyhow, this pie is certainly worth the effort, I know this when I see the excitement in my husband eyes when I serve him this caramel pie just right of the oven.
Ingredients
- Pie crust
Flour – 250 g
Baking powder – 0.5 tsp
Butter – 125 g
Sugar – 100 g
1 Egg
A pinch of salt
- Filling
2 eggs
Sugar 100 g
Sour cream – 1 tbsp
Milk – 130 ml
Butter – 30 g
Flour – 110 g
Vanilla sugar 1 tbsp
Baking powder – 1 tsp
Caramel 4 tbsp
2-3 apples
cinnamon
sugar to taste
lemon juice
Directions
- Combine butter with flour forming small crumbs, you can do it with your fingers or with a blender
- Add sugar to the mixture and mix well
- Add a beaten egg. Then form a ball of dough, wrap it in cling film and refrigerate for 30 minutes
- Remove the dough from the refrigerator and roll it out with a rolling pin between sheets of baking paper
- Form the bottom part of the crust, make several piercings with a fork in the layer
- Put parchment paper with a load on it on top of the dough, this is necessary so prevent dough from rising (I’ve used beans here). Bake in a preheated oven at 180 degrees C° (360 F) for about 30 minutes.
- Filling
- Cut the apples into slices 1 mm thick and sprinkle them with cinnamon and sugar, add lemon juice
- Beat 2 eggs with sugar until getting a bright colored mixture, add milk, sour cream and melted butter. Mix everything well
- Add flour and vanilla sugar. Stir.
- Add some apples to the mix, set aside the rest
- Pour the dough with apples on top of the finished sand base. Then bake for another 30 minutes.
- Mix the rest of apples with caramel and fry in a pan until the mixture is thickened.
- When the cake is ready, decorate it on top with caramel apples. Bon appetit.
