Ingredients
73 g (2.5 oz) brown sugar
100 g (3.5 oz) white flour
60 g (2 oz) oatmeal
35 g (1.2 oz) dried cranberries
1 medium egg
1 tsp baking powder
1 tsp cinnamon
15 g (0.5 oz) coconut flakes
1 tsp vanilla extract
65 g (2.2 oz) coconut oil
Directions
- In a small bowl, beat the egg
- Mix melted coconut oil with sugar
- Add the egg and coconut to the mixture, mix well
- Add all remaining ingredients. Mix everything until smooth. The dough should be dense and shouldn’t stick to your hands.
- Form small cookies from the dough. Bake them on baking paper for 15-20 minutes at 220 C° (400 F).
