Ingredients

  • Slaw
  • 1 grated garlic clove

  • 1/2 red onion, sliced

  • 1 jalapeno, sliced

  • 1 tablespoon hot pepper sauce

  • 1/2 cup mayonnaise

  • 1 cup sliced cabbage

  • 1/2 cup pickle slices

  • Chicken
  • 1 boneless, skinless chicken breast

  • 1 cup buttermilk

  • 1/2 cup all-purpose flour

  • 4 sandwich rolls

  • 2 tablespoons unsalted butter at room temp
    vegetable oil

  • 1 tablespoon black pepper

  • 1/2 teaspoon salt

Directions

  • For the spicy mayo mixture, stir together the hot pepper sauce, garlic and mayonnaise. Cover and refrigerate for at least 3 hours before serving.
  • For the slaw, mix the pickles, onion, jalapeno and cabbage in another small bowl, cover and refrigerate for at least 3 hours as well.
  • As for the fried chicken, whisk together the salt, pepper and flour in shallow bowl.
  • Place the buttermilk in a separate shallow bowl.
  • Place each piece of the chicken, one at a time, into the flour mixture and then into the buttermilk before placing once more into the flour. Put to the side.
  • Pour vegetable oil into a large skillet, enough for 1/2-inch depth. Place the bulb of deep-fry thermometer into oil and cook until the temperature reaches 180 C° (350 degrees F). Fry the chicken for 3 minutes on each side until cooked through. Place them on a wire rack and salt. Spread butter onto rolls.
  • Place second large skillet at medium heat. Cook the sandwich bread slices with the buttered side down until crisp, around 1 minute each. Do this until all slices are cooked.
  • Spread spicy mayo onto bottom of bread, followed by the chicken and slaw.
