Ingredients

  • 1 – 1 1/2 Pounds of Skirt Steak

  • Marinade
  • 1 Cup Water

  • 1 Tablespoon Cider or Red Wine Vinegar

  • 1 Tablespoon Vegetable Oil

  • 1 Teaspoon Onion Powder

  • 1 Teaspoon Minced Garlic

  • 1 Teaspoon Dry Mustard

  • 1 Teaspoon Chopped Parsley

  • 1/2 Teaspoon Basil

  • Salt and Pepper to taste

Directions

  • Combine all the marinade ingredients and mix thoroughly. Pour over steaks in a shallow glass dish or into a sealable plastic bag. Coat the steaks completely and turn them over. Let the steaks stand in the marinade for at least fifteen minutes, but it will be more effective to let them stand for an hour. For best results, marinade over night.
  • To cook the steaks on a grill, build a pile of charcoal briquets so they will heat quickly to a high temperature. Light the coals and let them burn until they are uniformly coated with ash. Spread the coals around, but keep them together.
  • Grill the steaks for about 8 minutes, depending on the thickness and the desired doneness. Turn them over just once and cook for about six to eight more minutes.
  • An alternative method is to use the broiler in the oven. Raise the rack in the oven so the steaks are about an inch away from the heating element. The cooking time is the same as on the grill.
