I’ve made a bunch of these cookies, but there were gone in pretty much one day! I call that a culinary success. I had my doubts about ginger and how it would play out with the rest of the sweet ingredients, but it turned out amazing.


Without ginger, these cookies would lose a bit of texture, but most importantly, an interesting spicy note you certainly don’t expect in a sweet tea-time cookie. I had an amazing time cooking these – you know, sometimes you put your hands on a dish that requires a lot of attention and very precise steps with no margin for error. We’re talking about foods that are something you can really be proud of, for example, homemade caramel I did. Luckily (or not) these cookies are something pretty easy and straightforward to make. You just make the batter and bake them, simple as pie any other cookie. Let’s talk a bit about ginger, a star of today’s recipe. Being famous for the health benefits it brings, ginger mostly helps with your mood. It boosts your “positive hormones”, increasing serotonin and dopamine levels. Ginger could also provide help for reducing anxiety, depression, dementia, Alzheimer’s disease, and post-traumatic stress disorder. So these cookies are superheroes that fight your bad mood from both sides – being tasty and sweet, while also making a direct impact on your good-mood hormones. Pretty powerful little cookie if you ask me, they should make an animated superhero movie about it 🤣

Ingredients

  • 100 g (3.5 oz) brown sugar

  • 100 g (3.5 oz) sugar

  • 125 g (4.5 oz) white flour

  • 160 g (6 oz) peanut butter

  • 1 large egg

  • 120 g (4.3 oz) grated apple

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 100 g (3.5 oz) butter

  • 20 g (0.7 oz) grated fresh ginger

Directions

  • Preheat oven to 180 degrees C° (380 F). Put the butter in the microwave for 40 seconds, it should become soft, but not liquid. Add butter and peanut butter to a large bowl
  • Mix everything with a blender for 5 minutes until the mass becomes light.
  • Add the egg and vanilla extract to the bowl. Once again, mix everything with a blender. The mass will become denser.
  • Then add white and brown sugar, also cinnamon, mix well.
  • Now add flour mixed with baking powder to the mixture and mix everything well with a spoon.
  • At the very end, add grated apple and ginger.
  • Stir everything until smooth. For best results, place the cookie dough in the freezer for 20-30 minutes. If you don’t have time, you can proceed right away.
  • Place baking paper on a sheet pan. Use a spoon to form cookies. Keep in mind that the cookies will double in size, so keep enough space between each of them.
  • Place the cookies in a preheated oven at 180 degrees C° (380 F) for 10-15 minutes until golden brown.
  • Let the cookies cool slightly. Now you can enjoy the incredible taste of this spicy peanut cookie!
