Ingredients

  • 1 kg (2.2 lbs) large unpeeled shrimp

  • 350 g (12.5 oz) skinless tomatoes, diced

  • 150 g (5.3 oz) tomato paste

  • 3 cloves garlic, minced

  • 3 shallots (100 g – 3.5 oz) cut into rings

  • 2 tbsp of chopped green onions

  • 3 tbsp finely chopped parsley

  • 80 ml (2.7 oz) dry white wine

  • 1-2 tbsp breadcrumbs

  • 3 tbsp olive oil

Directions

  • Remove the guts from the shrimp without removing the shell.
  • Fry shallots and chopped garlic until golden brown, for about 3-4 minutes.
  • Add tomatoes, tomato paste and wine to the pan with the shallots and cook for about 5-7 minutes until the tomatoes are soft and excess moisture has evaporated. Add salt to taste.
  • Then add shrimp to the pan and cook for about 5 minutes.
  • Now add 1-2 tablespoons of breadcrumbs to the pan. Cook until the sauce thickens, stirring occasionally with a spatula.
  • Sprinkle the completed dish with green onions and parsley.
  • Serve with pasta or baguette toasted in olive oil.
