Ingredients
1 kg (2.2 lbs) large unpeeled shrimp
350 g (12.5 oz) skinless tomatoes, diced
150 g (5.3 oz) tomato paste
3 cloves garlic, minced
3 shallots (100 g – 3.5 oz) cut into rings
2 tbsp of chopped green onions
3 tbsp finely chopped parsley
80 ml (2.7 oz) dry white wine
1-2 tbsp breadcrumbs
3 tbsp olive oil
Directions
- Remove the guts from the shrimp without removing the shell.
- Fry shallots and chopped garlic until golden brown, for about 3-4 minutes.
- Add tomatoes, tomato paste and wine to the pan with the shallots and cook for about 5-7 minutes until the tomatoes are soft and excess moisture has evaporated. Add salt to taste.
- Then add shrimp to the pan and cook for about 5 minutes.
- Now add 1-2 tablespoons of breadcrumbs to the pan. Cook until the sauce thickens, stirring occasionally with a spatula.
- Sprinkle the completed dish with green onions and parsley.
- Serve with pasta or baguette toasted in olive oil.
