For some, white chocolate is a bit unusual ingredient. Where chocolate originated in Mexico some 4000 years ago, the origin of white chocolate is unclear. Most people thank Nestle for introducing it commercially in the 1930s. Coincidently, the first-ever chocolate cookie recipe also came around the 1930s. (Cookies are believed to originate in the 7th century in Persia). So, we can safely say that it wasn’t long after that white chocolate was used in cookies!

Ingredients

  • 380 g (13.57 oz) white flour

  • 2 tbsp coconut flour or shredded coconut

  • 210 g (7.5 oz) sugar

  • 1/3 tsp salt

  • 10 g (0.35 oz) baking powder

  • 150 g (5.35 oz) white chocolate (chunks)

  • 150 ml (5.17 fl oz) coconut oil

  • 2 tbsp lemon zest

  • 55 ml (1.9 fl oz) lemon juice

  • 1 egg

Directions

  • In a medium bowl, whisk together all purpose flour, coconut flour or shredded coconut, baking powder, and salt. Stir everything well with a whisk until the mixture becomes homogeneous. Set aside.
  • In another bowl, mix sugar with lemon zest.
  • Add the egg and melted coconut oil to the bowl
  • Mix everything with a mixer (regular speed) for about two minutes.
  • Now add lemon juice.
  • Continue mixing with a blender for about two minutes until the sugar is completely dissolved.
  • Add flour to the bowl in small portions, constantly stirring it with a whisk.
  • You will get a dough that is feels too liquid. But don’t worry, it will get thicker in the refrigerator.
  • At the very end, add chunks of white chocolate to the dough and mix everything with a spatula. Optionally, you can leave 1/3 of the chocolate for decoration. To make it easier to work with the dough, put it in the freezer for 15 minutes. In the meantime, preheat the oven to 180 degrees C° (356 F).
  • Roll the dough into small balls, decorate them with chocolate pieces if desired. Put parchment paper on your baking dish, and place the cookies with a generous distance from each other. Remember, they will double in size.
  • Put the cookies in a preheated oven for 15 minutes at 180 degrees C° (356 F).
  • Cool the finished cookies & serve!
