An unusual combination of fresh avocado pear, onion, and a touch of lemon juice, served chilled with a swirl of fresh cream. Suitable for Vegetarians


  • 50g (1.7 oz) Butter

  • 1 tbsp Plain Flour

  • 50g (1.7 oz) Onions, chopped

  • 100g (3.4 oz) Avocados, stoned peeled, and chopped

  • 250ml (8.4 oz) Water

  • 1 tbsp Lemon Juice

  • 1/8 tsp Salt

  • 1/8 tsp Ground Black Pepper

  • 60ml (2 oz) Single Cream


  • Heat the butter in a saucepan and fry the onion gently for 1-2 minutes, remove from the heat and add the flour
  • Mixing well, gradually add the water to ensure a smooth consistency, and cook over low heat for 3-4 minutes.
  • Add Single Cream
  • Add the avocado, and lemon juice to the stock mixture. Using a hand blender, blend until it becomes smooth. Season to taste with salt and pepper
  • Chill for 2 hours and serve cold or alternatively return the soup to a clean pan and gently reheat, do not allow it to boil, pour into dishes and serve with a swirl of the cream.
