Ingredients
2 cups of all-purpose flour
3 eggs
1/2 cup white sugar
1 cup brown sugar
2 cups grated zucchini
1/2 cup vegetable oil
1/2 cup melted butter
1 cup chopped walnuts
1 teaspoon vanilla extract
1 teaspoons cinnamon, ground
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
Directions
- Preheat oven to 220 C° (440 F). Take two baking dishes and line the bottom of each with baking paper.
- In a large bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat together the eggs, vanilla, butter, oil, and sugar. Be sure to thoroughly mix the ingredients.
- Next, add the dry ingredients to the egg mixture.
- Stir the mixture and beat it well, and then add the zucchini and walnuts. Stir the complete mixture together until the ingredients are thoroughly combined.
- Pour the batter into the two prepared baking pans. Bake the zucchini bread for 40-60 minutes. Insert a toothpick into the center of the loaf; if the toothpick comes out clean, the bread is done cooking.
