  • 1 cup brown sugar

  • 2 cups grated zucchini

  • 1/2 cup vegetable oil

  • 1/2 cup melted butter

  • 1 cup chopped walnuts

  • 1 teaspoon vanilla extract

  • 1 teaspoons cinnamon, ground

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

Directions

  • Preheat oven to 220 C° (440 F). Take two baking dishes and line the bottom of each with baking paper.
  • In a large bowl, mix together flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, beat together the eggs, vanilla, butter, oil, and sugar. Be sure to thoroughly mix the ingredients.
  • Next, add the dry ingredients to the egg mixture.
  • Stir the mixture and beat it well, and then add the zucchini and walnuts. Stir the complete mixture together until the ingredients are thoroughly combined.
  • Pour the batter into the two prepared baking pans. Bake the zucchini bread for 40-60 minutes. Insert a toothpick into the center of the loaf; if the toothpick comes out clean, the bread is done cooking.
