Ingredients

  • 100 g (3.5 oz) powdered sugar

  • 40 g (1.4 oz) almonds

  • 1 large egg yolk

  • 150 g (5.35 oz) butter

  • 100 g (3.5 oz) chopped almonds

  • 250 g (8.9 oz) white flour

  • 1 tsp baking powder

  • 1 tsp vanilla extract

Directions

  • Preheat the oven to 220 degrees C° (428 F)­. Mix flour and baking powder with a whisk. Set aside.
  • In a large bowl, mix butter and powdered sugar until combined. The butter should be at room temperature, if you just took the butter out of the refrigerator put it in the microwave for 20-30 seconds to make it soft.
  • Add egg yolk and vanilla extract to butter.
  • Mix everything with a blender for about 1 minute until the mass becomes homogeneous.
  • Add chopped almonds to the bowl.
  • Continue mixing with a blender.
  • Now add flour. Knead the dough with your hands until everything is perfectly combined.
  • Form a sausage from the dough.
  • Cut it into equal chunks. Each piece should be approximately 1 cm (0.4 inch) thick.
  • Line your Baking Pan with Parchment. Put cookies on top. Top each with an almond. Leave enough space between the cookies because they will expand while baking. Put them in a preheated oven at 220 degrees C° (428 F) for 15-20 minutes.
  • Cool the finished cookies and serve.
