Smashed potatoes (also knows as crushed potatoes) is a delicious potato side dish variation that is tastier than simple pure or boiled potatoes, but at the same time healthier and with less calories than regular fried potatoes.

What makes this recipe so tasty is the butter-oil mixture with herbs that we apply before baking the previously boiled potatoes.
One of the features of this treat is that they have a crispy texture on the outside and a fluffy texture on the inside, making them a satisfying and comforting side dish.
Some people like to alter this recipe by adding cheese or bacon bits, but I like it healthier without these elements that add more fats, therefore more calories, which potatoes already have enough of.

Ingredients

  • 8-9 small potatoes

  • Dill 2 tbsp

  • Parsley 2 tbsp

  • Butter 3 tbsp

  • Oil 2 tbsp

  • Salt, pepper to taste

Directions

  • Boil potatoes for 20 minutes
  • Let them dry on paper towels
  • Flatten the potatoes using fork or a potato masher
  • Lubricate it with a mixture of vegetable oil and butter.
  • Add herbs and bake for 15 minutes, if you want a crispier version, bake for 5-10 more minutes.
